Does anyone out there know of a saddle maker who might be willing to rework a McClellan saddle into a medieval saddle?

Border States Leather work might consider it, I don't have their URL in front of me, but a search engine should turn it up easily.

Also, it has been done a number of times by evil SCA types. There is even an article with digrams and illustrations published in the West Kingdom leather worker's journal and also in Society Hoofbeats.

If you would like a hard copy to peruse, I can supply you with one. If you can use basic tools, you can do it yourself.

We can pick up a brand new McClellan-style saddle for $219 in New Zealand so one of my projects in the near future is to buy one and to rework it into a medieval style saddle.

It appears that the saddle can be reworked without too much difficulty so the work should be within the scope of any half decent saddler.
