Chickens in Hocchee (Chicken stewed with herbs and grapes):
Chykens in hocchee (Forme of Curye 36 14th century Englihs) . Take chykens and scald hem. Take persel and sawge, with othere erbes; take garlec and grapes, and stoppe the chikenues ful, and seeth hem in gode borht, so that they may esely be boyled therinne. Messe hem and cast therto powdour dowce.

Our Version:
1 cup chopped parsley
2 T chopped fresh sage
3 cloves garlic chopped
1 T each fresh thyme and marjoram
1 cup red seedless grapes
1 whole chicken (about 3 lbs.)
4 cups chicken broth
2 T poudre douce

Combine herbs and grapes and loosely stuff chicken. Put in a large pot and cover with broth. Simmer till done, about 40 minutes. Serve in a bowl with the broth poured over and sprinkled with poudre douce.
Serves 6
